aged cheddar biscuits

A great way to use up left-over cheese – you can use mainly aged cheddar but throw in any crumbles of blue and feta to make up the 200g. Serve with a wedge of brie and top with quince jelly or paste or your favourite chutney.


Makes 70-80 2cm biscuits
2 cups flour
200g butter, cubed
200g grated aged cheddar

Preheat the oven to 160degC fan bake.
Throw all the ingredients into your food processor and process till mixture forms a ball.
Stop then and divide mixture into 4.
Roll out dough on a lightly floured bench and use a small 2 cm cutter and place on greased baking trays.
12- 15 mins baking – you want some colour.
Store when cool in an airtight container
