apple shortcake

This is delicious frozen and reheated as needed.  It’s a real bonus for the home cook to find a recipe that so easily and successfully can be prepared ahead and re-created from the freezer!

 

Ingredients

 

370g butter

1 1/2 cups caster sugar

4 eggs

3 cups plain flour

2 tsp. cinnamon

1 x 500g tin sliced pie apple

4 tbsp extra sugar

 

Method:

 

Preheat oven to 180degC. Line a baking tray with grease-proof paper.

Cream butter and sugar, add eggs. Fold in flour and cinnamon. Place half mixture in prepared tin. Press down. Pat pie apple onto base. Sprinkle with 2 tbsp extra sugar. Put remaining batter on top. Sprinkle remaining 2 tbsp sugar on top. Bake at 180 deg C for approximately 45 minutes.
