apricot cinnamon teacake

When testing this cake at home some builders working on a fence just outside the kitchen commented on the delicious wafting aromas and quickly demolished several slices.  The next day they appeared again at morning tea time and it appears daily visits to check the stability of the fence are now in order! It is a given that this cake, will of course, be available every day!




3/4 cup prunes

3/4 cup dried apricots

boiling water

2 cups flour

2 tsp. baking powder

1/2 tsp. salt

1/2 cup brown sugar

1 tbsp cinnamon

200g butter

170g sugar

2 eggs

3/4 cup milk

1 tsp. vanilla

6 tbsp melted butter




Grease and flour a 22cm tin. Soak fruit in boiling water for 5 minutes, drain and halve. Sift flour, baking powder and salt. In another bowl, mix brown sugar, cinnamon and 1tbsp flour. Cream butter and sugar, add eggs. Beat well. Add flour mixture alternately with milk and vanilla. Add fruit. Put 1/3 batter into tin. Sprinkle with 1/3 brown sugar mixture and 2 tbsp melted butter. Repeat two times. Place in fridge overnight. Bake at 180degC for 55 minutes. Cool in tin on wire rack for 25 minutes prior to removing from tin.
