Aunty Alice tells me her immediate family have been demanding this slice in the tin for years. This is a “I just have to have another little piece” number – you will simply love it. A real family favourite!
ingredients
125g butter
1 cup sugar
2 eggs
2 cups plain flour
1 dessertspoon golden syrup
1 cup sultanas
2 tsp. baking powder
Icing:
2 cups icing sugar
25g butter, softened
2 tbsp hot water
1/2 cup toasted coconut threads
Method:
Preheat oven to 160deg C. Grease a 20 x 30 cm slice tin. Cream butter and sugar until light and fluffy. Add eggs, beat in with golden syrup. Fold sultanas into 1 cup of the flour to coat. Add to creamed mixture with extra 1 cup and baking powder. Bake at 160degC for 30 minutes or until firm in centre. When cool, ice with icing and toasted shredded coconut.
