berry & almond friands

This recipe makes 12.  It is a treat to make these as the quantities of egg whites and ground almonds makes it a special treat – but they are so easy – you may be tempted to make them more often!




180g butter, melted

1 cup ground almonds

5 egg whites

250g or 2 cups icing sugar

1/2 cup plain flour

Raspberries or blueberries



Preheat the oven to 190degC.  Grease 12 muffin pans.  Place the melted butter, ground almonds, egg whites, icing sugar  and flour in a bowl and mix thoroughly.

Divide between the 12 pans and place 3 raspberries or blueberries in each muffin pan.  Bake at 190degC for 25 minutes.


*Cook’s tip: These incredibly simple, delicious delights can be made to serve with coffee at the end of a special meal.  You can vary the berries if desired, boysenberries or blackberries would work as well.
