If you’re looking for a filling salad, look no further. This recipe is my take on a wonderful salad I ate at Trader Joe’s in Los Angeles. Such wonderful flavours and textures – the Israeli couscous gives this recipe substance.
200g diced pre-cooked chicken
2 generous handfuls of chopped lettuce (approx. 100g)
½ cup shredded red cabbage
¼ cup chopped spring onions
½ red capsicum, chopped
½ cup cooked corn (or corn from 1 ear)
1 cup cooked Israeli couscous (prepare according to directions on the pack)
1/3 cup chopped dried cranberries
¼ cup finely grated sharp cheese
2 tbsp finely chopped pecans
SWEET BASIL DRESSING
1/3 cup olive oil
1 cup roughly chopped basil
3 tsp lemon juice
2 tsp honey
3 tsp water
1 tbsp low fat mayonnaise
Salt and pepper to taste
In a bowl large enough for tossing salad, add chicken, lettuce, cabbage, spring onions, capsicum, corn, couscous, cranberries, cheese, pecans and set aside.
Combine olive oil, basil, lemon juice, honey, water and mayonnaise in a food processor until smooth. Pour over salad, toss gently, season and serve immediately.
