Today’s recipe is a Chimichurri Sauce an Argentinian herb sauce usually served with grilled meats but delicious with any roast.
½ cup olive oil
1/3 cup white wine vinegar
1 bunch flat leaf parsley
8 cloves garlic, roughly chopped
2 Tbsp dried oregano
1 Tbsp dried chilli flakes
Put everything into a food processor – blitz and season and place in an airtight jar in the fridge – leave for 24 hours before using. Enjoy!
