This raw-food delight is especially good for when the sugar-crave arrives and you just know you’ll make a bad decision if these aren’t around. Enjoy a guilt-free, yummy snack. Recipe by Christine Smith.
Makes 15-20 balls
2 cups pitted dates, soaked in water
1 tbsp – 1/8 of cup soak water from dates, depending on dryness of the dates
1 cup almonds
2 heaped tablespoons of raw cacao, more if you like it more ‘chocolatey’
1 tsp pure vanilla extract
½ cup dried plums, sour cherries or tangy dried apricots (optional) for a tangy kick
¼ – 1/3 cup desiccated coconut for rolling
¼ – 1/3 cup raw cacao powder for rolling
- Soak dates in water and let stand for a minimum of 30 minutes (overnight is handy) until they are soft enough for your food processor. Drain and reserve soak water; you might need it for processing.
- Process dates, nuts, vanilla and cacao powder in food processor until it is the texture of chunky biscuit dough. If too dry, add some of the water dates were soaked in. If too wet add more nuts or coconut.
- Add chopped dried fruit if using – process only to combine with mix.
- Form 2.5cm balls and roll in coconut or raw cacao powder.
CHRISTINE’S NOTES & TIPS
- A diabetic needs to check for the amount of dried fruit that works for them. Although these rolls have no processed sugar, dates are still high in sugar.
- Carefully check dates for pits that missed the machine – dentists are expensive!
- A plate of wee balls is cute for a nice supper and having a selection of both cacoa and coconut covered balls is a nice touch.
- Keep in fridge or freezer if you like a nougat texture.
- If you can’t get raw cacao powder, use the best quality cocoa you can find.
