citrus yoyos

Take an old-fashioned tried and true recipe and add your own personal flavour – great zingy, buttery flavour is achieved here with citrus added in both the delicate biscuit as well as the filling.

 

 
ingredients
 
175g butter

1/2 cup icing sugar

a few drops vanilla essence

2 tsp finely grated lemon zest

11/2 cups flour

1/4 cup custard powder

Butter icing:

50g butter softened,

1/2 cup icing sugar

2 Tbsp custard powder

1-2 tsp lemon juice

1 tsp lemon zest

 
method
 
Cream the butter and icing sugar until light and fluffy. Add vanilla and lemon zest. Sift flour and custard powder together. Mix sifted ingredients into creamed mixture. Roll teaspoonful of mixture into balls. Place onto a greased oven tray. Flatten with a fork. Bake at 180degC for 15-20 minutes. When cold sandwich together in twos with butter icing.

Butter icing:

Beat all the ingredients together until well combined.
