NZ Café of the Year, the Bespoke Kitchen’s recipe for Dark Rocky Road
2 cups marshmallows
¾ cup cranberries
¾ cup pistachios
1 1//2 cups macadamia nuts
500g Turkish delight (chopped)
1.5kg dark 70% chocolate
35 g freeze dried raspberries
Melt the chocolate in a pan over simmering water, set aside.
In a large bowl combine the rest of the ingredients, except raspberries, add the chocolate and mix well.
Press evenly into prepared tin, sprinkle with raspberries and refrigerate to set.
