Date fans love this cake – we iced it with lemon icing and it disappeared within seconds!
370g or 1 3/4 cups brown sugar
370g or 3 cups plain flour
2 tsp. baking powder
4 eggs, lightly beaten
Boil the dates, water and butter until you have achieved a jam consistency. Allow 10 minutes on a medium heat. Stir from time to time.
Preheat the oven to 180degC. Put the brown sugar, flour, baking powder and eggs in a bowl. Add the date mixture. Mix to combine. Pour into a prepared square 20cm cake tin. Bake at 180degC for approximately 55 minutes or until a skewer comes out cleanly.
