This shortbread tastes as good as it looks and so easy to make!
1 cup icing sugar
3 cups flour
1. Cream butter and sugar. Mix in flour. Form the mixture into a ball – cover in cling wrap and place in fridge for 20 mins,
2. Roll out or form a sausage and then slice.
3. Lightly greased tray 180degC for 15- 20 mins.
4. Make sure there is some colour on the shortbread.
Cook’s tip: shortbread dough works well frozen – make and wrap in plastic wrap and then place in a plastic bag removing all the air and freeze. Simply defrost in fridge and while still cold slice (the dough slices easily when cold) and bake as per above.
If you want to make “chocolate inspired shortbread replace 2 TBsp flour for 2 Tbsp good quality chocolate and if you want to add chocolate chips you can but just ½ cup as the shortbread is rich. At Xmas time add sweetened dried cranberries for a festive touch – again ½ cup.
