ginger crunch

We should eat more ginger. In former ti es ginger was used as a cure-all for many medicinal problems. Just thing, a slice of ginger crunch and a cup of tea could be a health treatment!




190g butter

1/2 cup sugar

2 cups flour

11/2 tsp baking powder

1 tsp. ground ginger

25g or 3 tbsp crystallized ginger


Preheat the oven to 180degC.  Cream the butter and sugar.  Mix all the dry ingredients into the creamed butter and sugar mixture.

Press the mixture into a 20cm x 30cm slice tin.

Bake at 180degC for 20 minutes.

Ice with warm icing.  Cut the slice before the base is completely cold.


Ginger icing:

100gm butter

2 cups icing sugar

2 tbsp golden syrup

3 tsp. ground ginger



Place all the icing ingredients in a saucepan and heat until combined.  Pour over cooled biscuit base.
