heritage tomato salad

This salad was served up at White Rabbit in Auckland last week and inspired me to ask for the ingredients rather than a recipe, as it is really a simple salad with amazing ingredients! Thank you to Sean Marshall.

Serves 1
200g mix of heritage tomatoes (chopped into quarters)
A few slices of water melon (seeds and rind removed)
A few slices of thin radish
½ cup chopped cucumber
1 picked gherkin (finely chopped)
¼ cup crumbled goat’s cheese or feta
2 olives finely sliced (they used crumbled dry olive)
1 tsp preserved lemon
1 Tbsp pomegranate seeds
Fresh herbs – scatter a few that you have to hand – Parsley and mint fine
1 tsp lemon juice
3 tsp olive oil
Black pepper
Sea salt
Scatter the ingredients in the order given onto a plate. Mix the dressing together and drizzle over the salad and serve.
