Meringes will not get any easier then this. Bake and store and in a pinch serve with fresh whipped cream and top with strawberries. Lots of wow and no stress!
Makes 13 little meringues
2 egg whites
125g or roughly ¾ cup icing sugar sieved
Preheat oven to 150degC.
Check to make sure the mixing bowl is clean.
Put whites and sugar in bowl – whisk and walk away – come back 13 minutes later.
Spoon onto baking-paper-lined tray using a teaspoon.
Bake 45 mins and turn off and leave to cool.
Will store for at least several weeks.
