Children like simple fare – this recipe is quick to make and refrigerates well. Great to have on hand to feed an instant appetite. For picky eaters, try serving this meat sauce over fun shaped pasta like bow ties.
Serves 4 adults or 6 children.
250g dry pasta (cook per directions on the pack)
1 Tbsp olive oil
1 cup chopped onion
2 Tbsp minced fresh garlic
500g extra-lean ground beef
2 Tsp dried oregano
1 fresh red chili seeded, washed (to remove heat) and chopped – optional
½ Tsp salt
Pepper to taste
6 Tbsp tomato paste
2 x 400g can diced tomatoes, undrained
½ cup shaved Parmesan cheese
1 Tbsp fresh Italian parsley
Cook pasta according to package directions, omitting salt. Drain.
While pasta cooks, heat a large fry pan over medium-high heat. Pour in olive oil allow to heat. Add onion and garlic; cook until translucent then add beef, oregano , chili, salt and pinch of pepper; cook 5 minutes or until beef is browned, stirring to crumble. Stir in tomato paste; cook 1 minute, stirring frequently. Add tomatoes. Bring to a boil; cook 1 minute. Reduce heat to medium-low; cook 3 minutes or until thickened. Serve over pasta; top with cheese, parsley and season to taste.
We washed the chili really well and there was no hint of heat – just the flavour of the chili. Eliminate it if you’re not comfortable adding it for your children.
