one-pot spaghetti

So quick… so easy. Serve with warm buttered crusty bread.

 

1 tbsp olive oil

450g lean ground beef

1 small onion, diced

225g mushrooms, sliced

2 garlic cloves, minced

1 tbsp Italian seasoning

800g canned diced tomatoes

425g pureed tomatoes

1½ cups water

1/2 teaspoon salt

1/4 teaspoon pepper

225g dried spaghetti

Parmesan cheese

 

1   In a saucepan over medium heat, add oil and beef, stirring until the mince has crumbled and cooked through.

2   Add onions, mushrooms, garlic and Italian seasoning and cook until mushrooms are soft.

3   Add diced tomatoes, pureed tomatoes and water and bring sauce to a boil. Season sauce to taste.

4   Break dried spaghetti in half and add to sauce. Push pasta below the surface of the sauce. Cook for 15 minutes or until pasta is al dente.

5   Adjust seasoning if necessary and serve immediately. Top with fresh grated parmesan cheese.
