3 tbsp extra virgin olive oil
1 small red chillies, deseeded and finely chopped
1clove garlic, finely chopped
1/2 cup coarse bread crumbs
1 tbsp chopped parsley – optional
1. Heat the oil in a medium-sized frying pan over moderate heat. Add the chilli, garlic and fry gently for 20 seconds
2. Add the breadcrumbs, fry, stirring constantly, until a rich golden brown. Turn out into a bowl lined with kitchen towel to absorb excess oil
3. Season with salt and milled pepper and a little chopped parsley if you have some.
Traditionally these bread crumbs are known as “Poor Mans Breadcrumbs” and are served ontop of linguini, spaghetti, fettucini etc.
However for a change, try them on top of salads, grilled fish or even onto of soups.
