peach and pecan streusel cake

This cake is made in five minutes in your food processor – it’s just that easy!
 

 
ingredients
 
1 ½ cups flour
2 tsp baking powder
¾ cup sugar
1 tsp baking soda
2 eggs
125 g soft butter
½ cup buttermilk
1 x 410 g tin sliced peaches – drained
 
Streusel:
½ cup flour
½ cup brown sugar
½ tsp cinnamon
50 g hard butter
½ cup pecans

 
method
 
Place flour, baking powder, sugar, baking soda, eggs, butter, buttermilk in bowl of food processor. Pulse 3 times for 10secs each time.
Place in greased lined 21 cm round cake tine. Top with well drained peaches, then streusel mix.
To make streusel mix: place all ingredients in food processor and pulse until crumbly.
Bake 1 hour, 160 deg C fan bake.
 
*Cook’s tip: always ensure the cake is cooked through properly by inserting a skewer and it must come out cleanly – ovens do vary so check after 1 hour and it may need a little extra time.
