rustic buttermilk potatoes

There are several options with these delicious potato creations – you can do as I have indicated below or you can take the cooked potato skin and deep fry into a luscious crunchy edible package for the creamy potatoes – up to you !

Serves 4
4 large baking potatoes washed and skin on but any rough spots removed
Olive oil
Salt snd pepper
1/2 -3/4 cup Buttermilk
A knob of butter 25 g will do
2 spring onion finely diced
Grated cheese

Bake your potatoes in the oven smeared lightly in olive oil and wrapped in tin foil. Bake 180degC for 45 mins ( depending on the size of the potato cooking times will vary ).
Once soft allow to cool – slice in half and scoop out cooked potato and place in a bowl and add butter, seasoning, and buttermilk- once mixed add spring onion and place back in potato skin
Top with grated cheese and place under the grill for a few mins till bubbly – keep an eye on it !
