savoury bread cases

This is a great way to use bread instead of pastry for canape or lunch box suggestion.

ingredients

One loaf has 17 slices – we will use 12 for the muffin tray.

12 slices of bread – sandwich bread is great, but you can use toast.

Cut the crusts off the bread – taking care to remove them all as any crust on the bread will affect the overall success of the cases.

Roll out the bread with a rolling pin. Butter one side and place butter side down into muffin pan

Mix together in a jug;

4 eggs

400 ml milk

Salt and pepper

2 tbsp finely chopped parsley*

 

Place this to one side – parsley optional

 

Into the bread cases divide up the following and place in the muffin trays.

3 rashers bacon, rind removed and chopped

3 tbsp finely chopped spring onion

6 tbsp grated cheese

6 tbsp chopped sundried tomato

 

Pour the egg custard over the filling and bake 160degC for 25 mins or until golden.
