This is quick to make only takes 20 mins

 

 
ingredients
 
500 g cooked brown rice
170 g lemon pepper flavoured tuna, drained
Zest of one lemon
1 tbsp fresh dill, chopped
1/2 cup snow pea shoots, chopped
2 tbsp finely chopped spring onion
1/2 cup finely diced celery
50 g sliced pickled ginger

 
Dressing
1 tbsp mayonnaise
Juice of one lemon
1 tsp wasabi
1 tsp rice vinegar
1 tsp mirin
salt and pepper
 
method
 
1. Place the rice the first eight ingredients in a bowl.
2. Gently combine.
3. Mix all the dressing ingredients and drizzle over rice mix and stir through gently.
4. Check seasoning and serve.

 
Cook’s tip: Wasabi, rice vinegar and mirin can be found in large supermarkets and give a unique clean, punchy flavour to this great lunch option.
