the best gingerbread

With the help of buttermilk you can transform this family favourite into something stellar! Try it warm from the oven with a cup of coffee or serve warm with poached fruits

 

 
ingredients
 
100g butter
1 cup sugar
2 tbsp golden syrup
½ tsp salt
1 tsp cinnamon
½ tsp ground cloves
1 tsp ground ginger
1 large egg
2 cups flour
1 tsp baking soda
1 cup buttermilk
1 Tbsp grated lemon zest

 
method
 
Preheat the oven to 180degC. Line a loaf tin with baking paper.
Blend the butter with the sugar and the golden syrup. Add the salt, cinnamon, cloves and ginger, stir well. Beat in the egg. Mix the flour and baking soda together and add alternatively with the buttermilk to the butter and sugar mixture, beginning and ending with the dry ingredients. Bake for 50-65 minutes depending on the depth of your loaf pan. Leave in pan for 5 minutes before removing.
