Roasting brings out the natural sweetness in vegetables and enhances the taste of meat.

 

1    Always have your red meat at room temperature before you roast.

 

2    Cooking vegetables in a covered microwave dish with no water and then draining and adding to the roasting pan gives you great roast vegetables.

 

3    Use your oven effectively – if roasting meat and veg why not add a pudding as well – one heat – a whole dinner.

 

4    Some items improve greatly from roasting – capsicums and asparagus are two examples

 

5    When roasting large meat items like a glazed ham – line your trays with foil for easy clean up

 

6    Cut your vegetables into even pieces so they cook at an even rate.

 

7    Don’t crowd your veges. The more space around your veges the better they will brown.
