About the Recipe
Recently visiting the fun and generous Sir Peter Leitch on Waiheke Island he insisted I sit down and have a “cup- of tea and a piece of cake”. The “cake” was this loaf sliced, buttered and made by Lady Janice Leitch – Peter’s wife who says the recipe is a family favourite and been passed down by her mother.
Ingredients
4 crushed Weet-Bix
3 Tbsp butter
1 cup fruit
1 cup sugar*
1 tsp baking soda
1 cup boiling water
1 large beaten egg
1 cup flour
1 tsp baking powder
½ cup finely- chopped walnutsngredient
Preparation
Step 1
Preheat oven to 180degC and butter and line a loaf pan.
Step 2
Throw the first five ingredients into a bowl. Add the boiling water, stir and leave for 5 mins to cool.
Step 3
Add the remaining ingredients and blend gently.
Step 4
Place mix in loaf tin and bake for 45 mins and check that a knife comes out cleanly – you may need a few more mins – depending on your oven.
*Please note you could add slightly less sugar if desired – it will work well with 2/3 or ¾ cup of sugar.
